About Chez Maeju. Chez Maeju is a Korean fermentation kitchen at 6200 Claremont Avenue in Rockridge, Oakland, opened in September 2026 by Chef Soojin Kim with OMC Hospitality. The menu is built around three house-made jang — ganjang, doenjang and gochujang — aged in onggi crocks, alongside kimchi and jangajji made each year the way her grandmother and mother made them.
